The cheese biscuits make lovely savoury bites that go particularly well with an apéritif.  They are very

morish.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 25 Mins

Ingredients

80 gms            Flour  - sifted          

3 tsp               Parmesan cheese  - grated      

2 pinches         Pepper  - white        

1 tsp               Salt          

30 gms            Butter  - softened     

1                    Egg yolk    

Method

Heat an oven to 170°C.

Work the flour through the fingers with the cheese, salt and pepper.  Rub in the butter and then work

in the egg yolk.  Knead the resulting dough for I minute and then roll it out into a 3mm sheet.  Stamp

out 2˝ cm circles

Bake on a lightly-floured baking sheet in the oven for 15 to I8 minutes.
