The taste of this prawn and sweet corn salad is a bit of a surprise.  The prawns and sweet

corn favours go remarkably well together, particularly with the lemon juice.  It has a light tangy

taste.

Ingredients

For     2  portions

½                   Lemon  - juice of

1 leaf              Lettuce  - chopped roughly

60 ml               Olive oil

1 tbs               Parsley  - flat-leaf, chopped

110 gms           Prawns  - cooked and peeled

2 tbs               Rocket  - chopped roughly

1 pinch             Salt

1 cob               Sweet corn

 

Method

Boil the sweet corn until cooked (about 10 minutes).  Allow to cool and then scrape off the

kernels.  Mix them with the prawns, lettuce, parsley and rocket.  Beat together the olive oil,

lemon juice and salt and pour over the prawn mixture.  Serve.
