This is one of many recipes for cooking prawns.  Its individuality comes from the prawns being deep fried and the use of wild garlic.

Serve as a starter or as a tapas dish.

Preparation Time: 5 Mins

Cooking Time: 4 Mins

Total Time: 10 Mins

Ingredients

For 4 servings…

250 gms           Prawns  - shells on    

                     Flour        

1                    Chilli  - chopped       

1 handful          Wild garlic  - chopped

2 pinches          Salt  - sea flakes      

1 tbs               Olive oil     

For deep frying

                     Oil           

To serve

4 wedges          Lemon      

Method

Coat the prawns in the flour, shaking off the excess.

Heat the frying oil to 160°C – 180°C.  Fry the prawns for 3-4 minutes or until they are crisp.  Lift them out with a slotted spoon and place them on kitchen paper to drain.  In a bowl, toss the prawns with the chilli, wild garlic leaves, salt and the olive oil.  Then serve with lemon wedges for squeezing.
