Prawns with garlic is a classic tapas dish.  It is simple to produce but has delicious Spanish flavours.  Serve as a tapas dish or as a starter with country bread to soak up the garlicky oil.

Ingredients

For     4  portions

2                    Chillies  - red, hot, dried - whole

6 cloves           Garlic  - sliced thinly

140 ml             Olive oil

340 gms          Prawns  - rawn peeled

                      Salt  - coarse, sea

To serve

                      Parsley  - chopped

Method

Heat the oil in a frying pan.  Add the garlic and chillies and let them sizzle for a few seconds.  Just as the garlic is beginning to take on a hint of colour, add the prawns and stir.  Cook for a further 2—3 minutes over a high heat, until the little prawns are a juicy and cooked pink.  Take off the heat, quickly sprinkle over the parsley and serve in the frying-pan at once, still sizzling.
