Gremolata originates in Italy and is a mixture of parsley, garlic and lemon zest.

Food always tastes better if it is eaten with fingers rather than a knife and fork.  This dish definitely requires fingers.

Ingredients

For 4 servings…

1                    Lemon      

2 tbs               Olive oil    

20                  Prawns  - large, raw, shell-on   

                     Cayenne    

                     Salt          

3 cloves           Garlic  - chopped very finely    

4 tbs               Parsley  - flat-leaf, chopped     

Method

Peel the zest off the lemon with a potato peeler and cut it into very fine strips.

Heat the oil in a large frying pan, add the prawns, season with some cayenne pepper and salt and toss them over a high heat for 4 minutes.

Cut the lemon in half and squeeze the juice from one half over the prawns.  Continue to cook until the juice has almost evaporated — the prawns should be quite dry.  Take the pan off the heat and leave it for about 1 minute to cool very slightly.

Sprinkle over the lemon zest, chopped garlic, parsley and ¼ teaspoon of salt and toss well together.  Pile the prawns into a serving dish and serve.
