Stir-fried honey, lime and soy king prawns with pak choi |

This is a prawn dish with a distinct eastern flavour. It is extremely quick to prepare. It has masses of flavour and makes an excellent starter. Preparation Time: 5 Mins Cooking Time: 6 Mins Total Time: 11 Mins Ingredients For 4 servings… 1 tbs Soy sauce - dark 2 tbs Honey - runny 1 Lime - juice and grated rind of 2 tsp Olive oil 16 Prawns - king - peeled 100 gms Pak choi - sliced Method Pour the soy sauce into a small saucepan and add the honey and lime zest and juice. Bring to the boil and then reduce the heat and simmer over a low heat for 5 minutes until reduced by half and syrupy. Remove from the heat and set aside. Heat a large wok or frying pan over a high heat until hot. Add the olive oil and heat for 30 seconds. Add the prawns and stir-fry over a high heat for 15 seconds. Add the soy sauce syrup mixture and stir-fry for a further 15 seconds. Add the pak choi and stir-fry for 20 seconds - until the leaves are just wilted – no longer. Serve immediately.
