In this recipe, the squid is egg-washed before being floured.  This gives it a crispy finish like it has been battered.  It is served widely in Spain as a tapas dish or a starter.  It is very easy but, to keep the squid tender, do not overcook.

Preparation Time: 15 Mins

Cooking Time: 10 Mins

Total Time: 20 Mins

Ingredients

For 4 servings…

450 gms           Squid       

2                    Eggs         

2 tbs               Water       

                     Flour        

                     Salt          

For deep-frying

                     Oil           

To serve

1                    Lemon  - cut into wedges        

Method

Clean the squid by pulling the head away from the body.  Remove the translucent quill inside and rub the pinkish skin off the outside. Wash well under cold water.  Cut the tubes into 1 cm slices.  Cut the tentacles from the head.

Put the eggs in a bowl, add 2 tablespoons water and beat well.  Put the flour on a plate and sprinkle generously with salt.  Working on one piece at a time, dip the squid pieces into the egg mixture, then into the flour, making sure they are well coated.  Set aside.

Heat the oil to 195°C.

Cook the squid pieces in batches until golden brown.  Remove them with a slotted spoon and drain on paper towels.

Let them rest for 5 minutes and then serve with the lemon wedges.
