In Portugal cod stews are often made with salt cod.  This one, although it could use salt cod, uses fresh cod.  It is simple to produce, but quite delicious.

Preparation Time: 10 Mins

Cooking Time: 22 Mins

Total Time: ½ Hr

Ingredients

For 2 portions

340 gms          Cod         

2 cloves           Garlic  - chopped finely          

2 tbs               Olive oil    

1                    Onion  - chopped     

1                    Orange  - juice of     

1 tsp               Paprika     

                      Pepper      

1                    Pepper  - green, diced

                      Salt          

1 tin                Tomatoes  

½ glass           Wine  - dry white     

To garnish

1 tbs               Parsley  - chopped    

Method

Heat the oil in a casserole and sauté the onion, garlic and pepper for about 5 minutes until softened.  Add the tomatoes, paprika, orange juice and wine.  Season, stir well and simmer for a further 5 minutes.

Lay the fish on top.  Season, cover and simmer gently for 12 minutes or until the fish is cooked but still firm.  Sprinkle with the parsley and serve from the casserole.
