Fried hake can be served as a tapas or as a starter.  It is light and crispy but the flavour of the fish comes through beautifully.

Preparation Time             10  Mins

Cooking Time                   5  Mins

Elapsed Time                 15  Mins

Ingredients

For     4  portions

                      Flour  - seasoned

450 gms          Hake  - fillet

For the batter

1 tsp               Baking powder

110 gms          Flour

1 pinch            Salt

                      Water

To serve

4 sprigs           Parsley

Method

Cut the hake into four pieces.  Dip into seasoned flour.

To make the batter…

Sift the flour, baking powder and salt into a bowl.  Add enough water to mix to the consistency of single cream.

To cook the fish…

Dip hake pieces into batter and shake off any excess.

Deep fry until crisp and golden.  Remove with a slotted spoon and drain. 

Serve with a wedge of lemon and a sprig of parsley.
