Herrings in oatmeal

Oatmeal goes brilliantly with herrings.  Coming from Scotland, this recipe leaves the herrings with a crisp outside.  As suggested, the herrings can be served simply with boiled potatoes and lemon slices or they are good with a mustard sauce.

Ingredients

For     4  portions

60 gms            Butter

4                    Herrings  - filleted

30 cl               Milk

110 gms          Oatmeal

4 tbs               Olive oil

                      Pepper  - black, freshly ground

                      Salt

To garnish

                      Lemon  - slices

                      Potatoes  - boiled

Method

Slash the skin of the fish crosswise with a sharp pointed knife and season inside and outside.  Dip the fish in milk.  Shake off the excess.  Coat well in oatmeal. 

Melt the butter and oil and cook the fish over a medium heat for 4 minutes on each side until brown and crisp.

Dry on kitchen paper and serve garnished with lemon and boiled potatoes.
