Herrings in oatmeal Oatmeal goes brilliantly with herrings. Coming from Scotland, this recipe leaves the herrings with a crisp outside. As suggested, the herrings can be served simply with boiled potatoes and lemon slices or they are good with a mustard sauce. Dip the fish in milk. Shake off the excess. Coat well in oatmeal. Melt the butter and oil and cook the fish over a medium heat for 4 minutes on each side until brown and crisp.
