This is a quick and easy way to cook whiting that produces a marvellous result.  The fish can

be served simply with lemon wedges or with tartar sauce, a garlic sauce or with an Hollandaise

sauce.  Salad leaves would make a good accompaniment.

Ingredients

For     2  portions

30 gms             Butter

                      Flour

2 wedges          Lemon

                      Milk

1 tbs               Olive oil

2 fillets             Whiting

 

Method

Wet the fish all over with milk and then coat in flower.

Heat the oil and butter in a frying pan over a high heat until sizzling.  Add the fish skin side down

 and cook until pale golden colour (about 5 minutes).  Turn over the fish and cook the other side

 until it is a pale golden colour (another 5 minutes or so).  Serve with lemon wedges.
