The tuna, marinated in this way, has a lovely Mediterranean flavour which is augment but the addition of anchovy butter. It is an easy dish to prepare. Preparation Time: 15 Mins Cooking Time: 4 Mins Total Time: 20 Mins Ingredients For 4 servings… 4 steaks Tuna For the anchovy butter 60 gms Butter 12 Anchovy fillets Pepper Salt ½ tbs Lemon juice For the marinade 1 pinch Cayenne 1 tbs Parsley - chopped 1 tbs Lemon juice Salt Pepper 2 cloves Garlic - crushed 2 tbs Olive oil Method To make the anchovy butter… Soften the butter. Purée the anchovy fillets with a mortar and pestle, season and add a dash of lemon juice. Work into the softened butter. Cool. To prepare and cook the tuna… Mix the marinade ingredients together and marinate the tuna for 30 minutes. Place the tuna on a hot griddle and cook each side for two minutes.
