This dish of partridges with tomato sauce is a simple Greek dish.  It is astonishingly tasty and full of sun.

Ingredients

For 2 servings…

2                    Partridges  - with giblets         

                     Pepper      

                     Salt          

60 gms            Butter       

110 ml             Wine  - dry white     

110 ml             Water       

3                    Tomatoes  - chopped

Method

Cut each partridge in half and salt and pepper them.  Chop up the giblets finely.

Put the butter in a flat, wide saucepan and brown the pieces of partridge on all sides evenly.

Add the giblets and stir.  Immediately pour in the wine and the water.  Allowed it to boil for a couple of minutes, add the tomatoes and salt and pepper.  Allow it to simmer until all the water has evaporated - about 45 minutes.

A red or possibly a robust white wine.
