This is a genuinely easy recipe to cook and prepare – it can be prepared in advance.  It has an interesting set of ingredients from East and West.  One would expect it to taste Oriental or Caribbean; in fact, it has its own unique taste that is difficult to characterise geographically.

Ingredients

For 2 servings…

2 breasts          Pheasant   

4 rashers          Bacon  - thin           

4                    Mushrooms  - button 

  Soy sauce       

For the sauce

10 cl               Coconut milk           

1                    Chilli  - chopped      

1 tsp               Ginger  - powder     

Method

Cut each pheasant breast into 3 pieces.  Pound each rasher of bacon to make it thinner and stretch it out.

Thread two skewers each with a piece of pheasant, then a mushroom wrapped in bacon and continue until each stick holds 3 pieces of pheasant and 2 mushrooms.

Drizzle a little Soy sauce onto each brochette and grill them for about 5 minutes on each side.  The bacon should be crisp and sizzling.

To make the sauce…

Put the coconut milk, chilli and ginger into a small saucepan.  Bring to the boil and simmer for 5 minutes.  Serve the brochettes on warm plates flooded with some of the hot sauce.

Variations

Other vegetables, such as onions or peppers, can be added to the skewers.
