The honey and ginger marinade gives the lamb chops an oriental flavour.  It can be grilled indoors as the recipe suggests or on a barbeque.

Preparation Time: 15 Mins

Cooking Time: 8 Mins

Total Time: 1½ Hrs

Ingredients

For 4 servings…

4                    Lamb chops

                      Olive oil    

For the marinade

3 tbs               Olive oil    

2 tbs               Soy sauce  

2 tbs               Honey      

1 clove            Garlic  - crushed      

1 tsp               Ginger  - fresh - finely grated   

1                    Chilli  - fresh red - de-seeded, finely chopped        

3 sprigs           Thyme  - bruised     

Method

Mix all the marinade ingredients and spread over the lamb chops.  Turn the chops so that they are nicely coated and then leave to marinate for at least an hour, turning occasionally.

Line a grill pan with foil and pre-heat the grill.  Brush the foil with a little oil.  Grill the chops for about 4 minutes on each side, until browned and crusty outside but still pink and juicy inside.
