Koftas, whose origins are in the Middle East are basically spiced meatballs. They can be cooked in different ways from grilling to barbecuing; they can contain different meats, although lamb is the most common; they can contain different spices; they can be served with different accompaniments from simple lemon slices to yoghurt sauces.

Preparation Time: 20 Mins

Cooking Time: 10 Mins

Total Time: 30 Mins

Ingredients

For 6 portions

1 tsp               Allspice  - ground     

1 tsp               Cinnamon  - ground  

1 tsp               Coriander seeds  - ground       

1 tsp               Cumin  - crushed     

2 cloves           Garlic  - crushed      

910 gms          Lamb  - minced       

2                    Onions  - large, minced          

1 tsp               Paprika     

2 tbs               Parsley  - chopped finely        

  Pepper  - freshly ground    

  Salt              

To serve

  Lemon  - wedges

  Parsley  - chopped

Method

Whizz the meat in a food processor, then add the onion and spices of your choice and whizz again. 

Shape the meat like sausages round skewers.  Lightly oil a grill grid and then cook under a high heat for about 5 minutes until nicely browned and crispy on the outside but still tender and juicy inside.  Serve.
