Marinating lamb chops with rosemary and lemon produces meat which is absolutely delicious.  They ideal for barbeques but are very good cooked indoors under a grill or on a hot griddle.

Preparation Time: 10 Mins

Cooking Time: 4 Mins

Total Time: 2 Hrs

Ingredients

For 6 servings…

6                    Lamb chops

For the marinade

2 sprigs           Rosemary  

2                    Bay leaves

1                    Lemon  - juice and grated rind of

110 ml             Olive oil    

1                    Onion  - small, sliced 

1 glass            Wine  - red 

10                  Peppercorns           

To serve

6 sprigs           Rosemary  

Method

Mix the marinade ingredients together and pour them over the lamb.  Leave for two hours, turning them over occasionally.

Grill on a barbecue, under a grill or on a griddle until cooked to your liking – two minutes on each side will leave them rare.

Serve with a fresh sprig of rosemary on each chop.

Wine recommendations

A rustic red wine, but it does not matter whether it is powerful or more subtle.
