This is a lovely quite rich recipe for lamb steaks.  They can be grilled, barbecued or cooked in a griddle pan.

Preparation Time: 15 Mins

Cooking Time: 4 Mins

Total Time: 2 Hrs

Ingredients

For 4 servings…

4                    Lamb steaks  - from the leg     

For the marinade

6                    Spring onions  - chopped        

2 tbs               Olive oil    

1 glass            Wine        

1 tbs               Vinegar  - red wine   

4 stalks           Parsley     

4                    Peppercorns           

For the sauce

110 ml             Cream  - single        

                      Pepper      

                      Salt          

Method

To marinate the lamb…

Mix the marinade ingredients and cover the lamb steaks with the resulting marinade.  Turn them occasionally.  Drain them well but reserve the marinade.

To cook the lamb…

Cook the lamb steaks for 2 minutes on each side.

To make the sauce…

Simmer the reserved marinade over a low heat for 5 minutes.  Remove the peppercorns and parsley stalks and emulsify the remainder.  Return to the pan, stir in the cream, simmer on for a further 5 minutes, taste and bring out the flavour with small additions of salt.  Pour a little of this over each steak.
