Pan-fried liver with onions and chorizo |

This liver dish is similar to the way that lamb’s liver is often cooked except that it has chorizo in place of bacon. This gives it a Spanish flavour. Preparation Time: 10 Mins Cooking Time: 12 Mins Total Time: 20 Mins Ingredients For 4 servings… 1 tbs Flour Pepper Salt 1 handfull Sage leaves - chopped finely 450 gms Liver - lamb's 1 tbs Olive oil 1 Chorizo sausage - cut into cubes 1 Onion - sliced finely 3 tbs Vinegar - balsamic 250 ml Stock - lamb or chicken Method Mix together the flour, seasoning and sage leaves. Toss the liver in this. Heat half the oil in a large frying pan and cook the chorizo and onions for 4 minutes until crispy. Remove them and keep them warm. In the same pan heat the remaining oil and cook the liver for 1-2 minutes on each side to seal it. Remove the liver from the pan and keep it warm with the chorizo. Deglaze the pan with the balsamic vinegar, stir in the stock and reduce for 3 minutes. Return the liver, chorizo and onions to the pan and simmer for 1 minute. Serve.
