This is a delicious way of cooking ox kidney.  It is simple and the kidney turns out tender.  It can be served as a supper dish.

Total Time: 3¼ Hrs

Ingredients

For 2 servings…

230 gms          Ox kidney  - skinned 

                     Salt          

                     Butter       

                     Pepper      

60 gms            Mushrooms  - chopped

2 tbs               Brandy      

1 small glass     Wine  - white          

140 ml             Stock  - beef

60 gms            Cream       

To serve

Method

Soak the kidney in warm, salted water for a two of hours and them slice it into pieces about 1 cm thick.

Heat a little butter in a frying-pan and turn the kidneys over in this for a minute.  Add salt, pepper and the mushrooms.  Pour over the brandy warmed, set light to it and shake the pan until the flames go out.  Pour the wine into the pan, let it bubble and then add the stock.  Transfer the kidneys and their juice into a small earthenware casserole, cover and put into a low oven (150°C) for 50 minutes.

Boil the cream in a small, wide pan and pour into it the sauce from the kidneys.  Stir and cook quickly until the sauce is thick.  Pour back over the kidneys.

Serve with croûtons of fried bread.
