This dish, although spicy, is not excessively so.  It may appear to be a little “belt and braces” with a chilli and chilly and barbeque sauces but it works extremely well and is absolutely delicious.

Preparation Time: 10 Mins

Cooking Time: 15 Mins

Total Time: 25 Mins

Ingredients

For 4 servings…

2 tbs               Olive oil     

½                   Onion  - red - chopped

1 clove             Garlic  - crushed       

300 gms           Ox liver  - cut into bite size bits 

75 gms            Mushrooms  - sliced  

½ tsp              Cayenne    

1 pinch            Oregano    

1                    Chilli  - red, hot, dried - chopped

½ tsp              Curry powder          

½ tsp              Paprika      

                     Pepper  - freshly ground, black  

                     Salt          

1 tbs               Barbeque sauce        

½ tsp              Chilli sauce  - hot      

10 cl               Cream  - double       

10 cl               Parmesan cheese  - grated      

To garnish

                     Parsley  - chopped    

To serve

                     Bread       

Method

Heat the oil in a large pan over a medium heat.  Add the onion and garlic and sauté for 5 minutes or until the onion is translucent.

Add the liver and mushrooms and mix well.  Stir in the cayenne pepper, oregano, chilli, curry powder, paprika, salt and pepper.  Cook for 5 minutes or until the liver is just browned on the outside.

Stir in the barbeque sauce, chilli sauce, cream and cheese.  Cover the pan with a lid and simmer for 3 minutes or until the cream has thickened.

Garnish with parsley and serve hot with bread.
