Cooking veal escalopes with white wine is just about the simplest way to prepare veal escalopes but, provided the veal is of good quality, it is extremely mouth-watering.

Cooking Time: 5 Mins

Total Time: 20 Mins

Ingredients

For 4 servings…

4                    Veal escalopes         

                      Pepper      

                      Salt          

                      Butter       

½ glass           Wine  - white          

To serve

  Potatoes  - mashed          

  Parsley  - chopped or fried  

Method

Beat out the escalopes until they are very thin.  Season them with salt and pepper.

Heat some butter in a frying-pan and cook the escalopes on both sides. Take them out and keep them hot.  If there is too much butter, pour some away.

De-glaze the pan with the wine and cook it for a minute or two scraping the bits off the pan so that the wine loses its raw taste and so that it amalgamates with the pan juices.  Pour this sauce over the escalopes.

Serve with mashed potatoes to mop up the sauce and with chopped or fried parsley.
