“Tajarin” is what they call tagliolini or tagliatelle in Piemont. This dish is quick and easy to make and is one of the best ways of showing off truffles. It is best with white truffles but is still wonderful with black truffles. Preparation Time: 5 Mins Cooking Time: 5 Mins Total Time: 10 Mins Ingredients For 4 servings… 450 gms Tagliolini - fresh Truffle - very thinly sliced 80 gms Parmesan cheese - grated 3 tbs Cream - double Salt Pepper - freshly ground, black 60 gms Butter Method Cook the pasta for 1-2 minutes until al dente. Drain and reserve a little of the cooking water. Melt the butter and toss the pasta in it until well coated. Add the cream, salt, pepper and enough of the reserved water to achieve a smooth consistency. Add the Parmesan cheese and toss well. Serve with the fine slices of truffle on top of each portion. Variations If tagliolini is not available use tagliatelle – in fact it works with almost any pasta fresh or dried. Wine recommendations A white wine.
