Beetroot salad à l'Alsacienne |

The sausage gives this salad a true taste of Alsace. The dish can be served as an accompaniment for other cold dishes or, perhaps better, as an hors d’œuvre. Preparation Time: 15 Mins
Total Time: 1¼ Hrs Ingredients For 6 servings… 3 Beetroots - cooked and sliced 3 tbs Vinaigrette 1 Saveloy sausage - sliced For the vinaigrette 1 tsp Mustard - Dijon 1 clove Garlic - crushed 1 Shallot - chopped finely 1 tbs Parsley - chopped ½ tsp Sugar - caster 3 tbs Olive oil 1 tbs Vinegar - white wine 1 pinch Cayenne Method Make the vinaigrette dressing… Put all the ingredients in a bowl and beat them together. To assemble the salad… Pour the vinaigrette over the beetroot and marinate for I hour. Just before serving, garnish with the slices of saveloy. Variations The saveloy can be omitted but the dish would not have the Alsace flavour. It would still be a delicious beetroot salad.
