The beetroot salad dish gets its “Scandinavian” from the inclusion of pickled herrings and, to a lesser extent, onion rings. It makes an interesting variation from more conventional beetroot salads. It can be served to accompany other dishes or as a starter. Preparation Time: 20 Mins
Total Time: 20 Mins Ingredients For 4 servings… 3 Beetroots - cooked, cut into large dice Vinaigrette For the vinaigrette 1 tsp Mustard - Dijon 1 Shallot - chopped finely 1 clove Garlic - crushed 1 tbs Parsley - chopped 1 tsp Sugar - caster 1 pinch Cayenne 6 tbs Olive oil 1 tbs Vinegar - white wine To garnish Herrings - pickled Eggs - hard-boiled, quartered 1 Onion - sliced and the rings separated Parsley - chopped Method To make the vinaigrette… Put all the vinaigrette ingredients in a bowl and beat them together. To make the salad… Sprinkle the beetroot with the vinaigrette and place it in a salad bowl. Garnish with the herrings cut into pieces, the hard-boiled egg and onion and sprinkle with parsley. Variations If pickled herrings are not available, use anchovy fillets. Wine recommendations A white wine or a light red wine.
