This is a simple Middle Eastern beetroot salad. Different dressings can be used but this one is good. Preparation Time: 10 Mins
Total Time: 10 Mins Ingredients For 4 servings… 2 tbs Lemon juice 2 tbs Olive oil 30 cl Yoghurt Salt 450 gms Beetroot - cooked and diced To garnish 1 tbs Parsley - chopped Method Mix the lemon juice with the oil, add the yoghourt, and salt to taste. Beat well. Fold in the beetroot. Pour into a serving dish and garnish with chopped parsley. Note that the times shown assume that the beetroot is cooked and prepared.
