This is a lovely salad made from bitter leaves and flavoured with bacon. Preparation Time: 10 Mins Cooking Time: 5 Mins Total Time: 15 Mins Ingredients For 4 servings… 1 rasher Bacon - streaky, smoked - diced Endive leaves 1 head Chicory - cut up roughly Watercress For the vinaigrette 1 tbs Vinegar - red wine 3 tbs Olive oil 1 tsp Mustard - Dijon Method Dry-fry the bacon until crispy. Remove from the heat leaving behind any fat. Add the vinegar to the fat and combine them. Mix the leaves in a bowl and add the bacon lardons. Whisk together the oil and mustard and then add in the vinegar / fat mixture. Add this vinaigrette to the leaves and toss to cover them.
