This lovely salad dish makes a delicious starter or tapas dish. It is easy to prepare. Preparation Time: 10 Mins Cooking Time: 3 Mins Total Time: 13 Mins Ingredients For 4 servings… 200 gms Watercress 200 gms Raspberries 2 tbs Pine nuts - roasted 1 tbs Olive oil 200 gms Goats' cheese - cut into 1 cm slices 200 gms Black pudding - cut into 1 cm slices For the dressing 3 tbs Olive oil 1 tsp Honey - runny 1 tbs Vinegar - Sherry Pepper - freshly ground, black Salt Method Toss the watercress with the berries and pine nuts. Heat the oil in a non-stick pan over a medium to high heat. Fry the goats’ cheese slices on one side only, until golden. Remove from the pan and then pan-fry the for about 2 minutes on each side. Remove from the pan and drain on kitchen paper. Add the goats’ cheese and black pudding slices to the salad. Whisk together the ingredients for the dressing, pour it over the salad and serve immediately. Variations Loganberries make a good substitute for raspberries.
