Cauliflower salad with herbs and mayonnaise is an unusual, but pleasantly light, salad that goes

 with all types of main course.  It is also good as an hors d’œuve dish.

Ingredients

For     6  portions

1                    Cauliflower  - divided into bouquets

30 cl                Mayonnaise

  Salt

For the herb sauce

6 tbs               Olive oil

1 tbs               Parsley  - chopped

                      Pepper

                      Salt

1 tsp               Tarragon  - chopped

3 tbs               Vinegar  - white wine

For the mayonnaise

                      Cayenne

1                    Egg  - yolk

½ tsp              Honey

1 tsp               Mustard  - Dijon

10 cl                Olive oil

                      Pepper  - white

½ tsp              Salt

1½ tbs            Vinegar  - white wine

 

Method

Bring a saucepan of water to the boil, add the cauliflower and cook for 10 minutes.  Drain the

cauliflower and allow it to cool.

In the meantime, make the mayonnaise…

Put the egg yolk into a food processor.  Add the seasonings, honey, mustard and one drop of

olive oil and whisk for a minute or two.  This thickens the yolks and prepares them for the oil.  

Now add the oil 2 or 3 drops at a time.  As the mixture thickens up the oil can be added a little

faster.  Continue until all the oil is used.  If the mixture thickens too much add some vinegar.  At

 the end taste the sauce and add some more vinegar if it is not sharp enough.  Put into a

serving dish and dust with cayenne.

Prepare the herb sauce…

Blend together the sauce ingredients.

Pour the sauce over the cooled cauliflower and chill for 1 hour.  Serve the salad with the

mayonnaise separately.
