This coleslaw has a good, rich taste with a kick of acidity from the vinegar.

Ingredients

For 4 servings…

¼                   Cabbage  - white      

¼                   Cabbage  - red        

1                    Onion  - red

1                    Carrot       

200 gms           Mayonnaise

60 gms            Mustard  - Dijon       

½ tbs              Vinegar  - cider        

                     Pepper  - freshly ground, white 

                     Salt          

Method

Shred all the vegetables and transfer them to a large bowl and mix until all the vegetables are combined.

For the dressing, whisk the rest of the ingredients together in a separate bowl.  Taste and add a little more vinegar and mustard if needed.

Spoon the dressing over the shredded vegetables and toss them together.

Taste and adjust the seasoning if needed.

Serve straight away or refrigerate until needed.

Variations

A grated fennel bulb can be added.
