This simple salad comes from France and is particularly good with cold trout or salmon; however, it is also lovely with cold meats. The secret is to cut the cucumber wafer-thin – a mandolin is best for this. Preparation Time: 10 Mins
Total Time: 70 Mins Ingredients For 6 servings… ˝ Cucumber - peeled and sliced very thinly Salt 1 tbs Olive oil 1 tsp Vinegar - white wine 1 pinch Sugar Chives - chopped
Method Sprinkle the cucumber with salt, put it into a colander, press down with a plate on which is put a weight and leave for 1 hour. Rinse off the cucumber and dry. Place in a serving dish. Pour a vinaigrette made from the oil, vinegar and sugar over the cucumber. Sprinkle with the chives.
