Cream cheese and cucumber salad

Although this dish includes feta, a Greek cheese, it actually comes from Egypt.  It makes an excellent accompaniment, particularly, with cold trout or salmon.

Ingredients

For 4 servings…

230 gms           Feta cheese

 tbs                 Water       

1                    Lemon  - juice of      

 tbs                 Olive oil     

1                    Onion  - mild, chopped finely    

1                    Cucumber  - smaill, peeled and diced      

                     Pepper  - freshly ground, black  

Method

Crumble the cheese with the water, using a fork, and work in the lemon juice and olive oil.  Mix in the onion and cucumber and season with pepper.

Serve.
