Cucumber salad with mustard

This salad is quite delicious with cold meats or it can be served as a tapas dish.

Ingredients

For 4 portions

1 tbs               Chervil  - chopped    

1                    Cucumber  - peeled and sliced into rounds

½                   Lemon  - juice of      

1 tsp               Mustard  - Dijon      

1 tbs               Olive oil    

                      Pepper      

                      Salt          

Method

Put the cucumber slices in a colander, sprinkle with salt and leave for 30 minutes to draw out the water.  Rinse in water, dry on a cloth and put into a salad bowl.  Strew with chervil.

In a separate bowl, beat the lemon juice, mustard, oil, salt and pepper.  Pour this sauce on to the cucumber and to mix gently.  Serve at once.
