This salad is nice and refreshing.  It makes a good accompaniment to spicy dishes.

Ingredients

For 4 servings…

2 cm               Ginger  - grated       

1 tbs               Soy sauce  

1 tsp               Sesame oil

1                    Lime  - juice of        

  Pepper  - freshly ground, black         

  Salt              

1                    Cucumber  - peeled, centre discarded and cut into long ribbons

1 handful         Coriander  - chopped 

1                    Chilli  - red, hot, dried - chopped

To dress the salad

                     Olive oil    

                     Pepper  - freshly ground, black 

                     Salt  - flakes

Method

Put the ginger on to a serving platter and add the soy sauce and the sesame oil.  Squeeze in the juice of 1 lime, then check the seasoning.  Place the cucumber ribbons on to the platter.

Sprinkle the coriander over the cucumber.  Sprinkle the chilli over the other ingredients.

Take the platter to the table and, when ready to eat, dress with olive oil, pepper and salt and gently toss.
