This is a Turkish salad but is extremely popular throughout the Middle East. It can be served as a mezze dish. It is excellent with salmon or trout. Preparation Time: 10 Mins
Total Time: 40 Mins Ingredients For 6 servings… 1 Cucumber - Peeled and diced Salt 3 cloves Garlic - crushed 40 cl Yoghurt Pepper - white 3 tbs Mint - fresh - chopped To garnish Mint Method Sprinkle the cucumber with salt and leave in a colander to drain for ˝ hour. Crush the garlic with a little salt. Mix a few tablespoons of the yoghourt with the garlic, then add this mixture to the rest of the yoghurt and mix well. Add pepper to taste. Finally add the mint. Drain the cucumber and mix with the yoghourt. Pour into a serving dish and decorate with more mint.
