This Greek artichoke salad is absolutely delicious.  It can be served to accompany cold meats, as a starter or as a meze dish.

Ingredients

For 6 servings…

400 gms          Artichoke hearts  - cooked and quartered 

110 gms          Feta cheese  - crumbled         

4                    Olives  - black         

½                   Pepper  - red, chopped          

½                   Pepper  - green, chopped       

30 cl               Tomatoes  - cherry   

230 gms          Onion  - red, chopped

110 gms          Salad leaves           

For the vinaigrette

70 ml              Olive oil    

2 tbs               Vinegar  - red wine   

1 tsp               Oregano    

1 tbs               Lemon juice            

Method

Make a vinaigrette by whisking together the olive oil, vinegar, oregano and lemon juice.

Combine the artichokes, feta cheese, olives, red and green peppers, tomatoes and onion.

Pour the vinaigrette over the artichoke salad mixture.  Toss gently and refrigerate until ready to serve.

Serve the artichoke salad on a bed of fresh salad leaves.
