This green bean salad is a very simple dish.  It has its origins in the Middle East.  The recipe uses lime juice and fresh coriander.  Alternatively, lemon juice and fresh parsley can be used.

Preparation Time: 10 Mins

Cooking Time: 5 Mins

Total Time: 30 Mins

Ingredients

For 6 servings…

4 tbs               Olive oil    

450 gms          Beans  - French - topped and tailed        

                      Salt          

2                    Limes  - juice of       

2 cloves           Garlic  - chopped finely          

3 tbs               Coriander  - chopped finely     

Method

Coat a wide shallow pan with 1 tbs of the oil and then put in the beans.  Just cover them with water and sprinkle on a little salt.  Cook from 5 minutes, shaking the pan from time to time to prevent sticking.  The beans should al dente.  Drain and put in a serving dish.

Toss the beans in the rest of the oil and lime juice while still warm and then leave to cool.

Sprinkle with the garlic and coriander.

Variations

This recipe can be used as a way of making a runner bean salad.
