This salad has lovely flavours of the Mediterranean.  Be flexible with what vegetables are included – using those that are available.

It can be served as a side dish or as a separate course.

Ingredients

For 6 servings…

1 head             Lettuce      

  Tomatoes       

  Cucumber      

  Mushrooms  - button        

  Celery           

  Courgettes  - baby

  Fennel  - Florence

  Radicchio       

  Olives  - black  

For the dressing

1 clove             Garlic  - chopped     

3                    Anchovy fillets  - chopped finely

1 tsp               Capers  - chopped finely         

1 tbs               Parsley  - chopped    

1 tsp               Tarragon  - chopped 

½                   Lemon  - juice of      

110 ml             Olive oil    

                     Pepper  - freshly ground, black 

Method

To make the dressing…

Mix the garlic, anchovy, capers and herbs and then beat in the lemon juice, olive oil and pepper.

To make the salad…

Place the washed lettuce in a salad bowl and arrange the other prepared vegetables attractively on top – using any of the vegetables that are available.

Dress and toss when ready to eat.
