Leeks are under appreciated as a stand-alone vegetable or as a salad. This salad dish benefits from a most interesting vinaigrette – one with two different mustards. They go extremely well with the leeks and have a nice tangy taste. Preparation Time: 10 Mins Cooking Time: 10 Mins Total Time: 20 Mins Ingredients For 2 servings… 2 Leeks - halved lengthways Salt For the vinaigrette 1 tbs Olive oil 3 tbs Vinegar - cider 1 tsp Mustard - Dijon 1 tsp Mustard - grain 2 tbs Capers 1 tbs Parsley - chopped Pepper Salt Method Cook the leeks in a pan of boiling, well-salted water for about 10 minutes, or until tender. Turn off the heat under the pan and leave the leeks in the cooking liquid while the vinaigrette is made. Whisk the vinaigrette ingredients together and season to taste. Lift out the leeks from their cooking liquor and slice each piece in half lengthways. Arrange them in a dish with their cut sides upmost. Spoon over the vinaigrette and serve immediately.
