Lettuce, avocado and pepper make a lovely combination that is a bit different from the usual lettuce-based salads.

Ingredients For 0 portions 1 Avocado ½ Lemon - juice of 1 Lettuce - large heart 2 tsp Mustard - Dijon 5 tbs Olive oil 1 Pepper - red, seeded and cut into juliennes Salt
Method Separate the leaves of the lettuce. Cut the avocado into two, remove the stone, scoop out the flesh and cut it up. Coat the avocado flesh with lemon juice to stop it blackening. In a bowl mix together the olive oil, mustard and a pinch of salt. Arrange the lettuce, avocado and pepper together and pour on the sauce. Serve immediately.
