This is a nice summery salad or, if served in the winter, reminds one of summer.  It is particularly good with cold, goose, duck or pork.

Ingredients

For 6 servings…

3                    Oranges    

230 gms           Mushrooms  - sliced finely       

  Pepper           

  Salt              

1                    Lettuce      

  French dressing

60 gms            Walnuts  - chopped finely        

For the vinaigrette

6 tbs               Olive oil     

1 tbs               Vinegar  - white wine 

1 tsp               Mustard  - Dijon       

1 clove             Garlic  - crushed       

1 tsp               Sugar  - caster        

1 pinch            Cayenne    

1 tbs               Parsley  - chopped    

Method

Squeeze the juice of one of the oranges over the mushrooms, sprinkle with salt and pepper and leave while the other oranges are peeled and thinly sliced.  All the white pith should have been removed.

Lay crisp lettuce leaves in the bottom of a dish.  Put on them a layer of orange slices and a layer of mushrooms, then more orange slices and a sprinkling of mushrooms on top.  Pour over the French dressing and sprinkle with the walnuts.

To make the French dressing…

Put all the ingredients in a bowl and beat them together.
