Runner beans with garlic, mint and lemon dressing makes a lovely salad when served cold.  It is also good warm or can be served as a hot vegetable.

 

Preparation Time             15  Mins

Cooking Time                   7  Mins

Elapsed Time                   1  Hr

 

Ingredients

For     4  portions

30 gms            Butter

1 clove            Garlic  - chopped finely

2 tbs               Mint  - chopped

450 gms          Runner beans  - sliced and cut into 5 cm lengths

For the dressing

˝ tsp             Mustard  - Dijon

4 tbs               Olive oil

                      Pepper

                      Salt

1 tbs               Vinegar  - white wine

 

Method

Boil a pan of water and cook the beans in it for five minutes - until slightly softened.

Meanwhile, combine the olive oil, vinegar, mustard and seasonings to make the dressing.

Drain the beans then sauté them in a little butter, with the chopped garlic, for 2 minutes.

Transfer to a serving bowl and add the dressing plus a tiny squeeze of lemon and then scatter over the mint.  Allow them to cool.
