The simplicity of this green salad is what makes it the ideal accompaniment for hot meat of fish dishes or even as a stand-alone light course. The important thing is that the vinegar should not over-power the oil and lettuce. Different oil and, indeed, vinegars can be used. One vinegar that works perfectly is sweet, clear, Pedro Ximénez balsamic vinegar from Spain. Preparation Time: 10 Mins
Total Time: 10 Mins Ingredients For 4 servings… 1 Lettuce - green, leaves Pepper Salt 2 tbs Olive oil ½ tbs Vinegar - wine Method Put the lettuces leaves in a bowl. Sprinkle lightly with salt and pepper and then pour on the oil and vinegar. Mix thoroughly so that the leaves are covered all over with the oil and vinegar. Serve.
