This smoked duck breast salad makes a lovely starter or light supper dish. The duck, orange, walnuts and avocado go really well together. Preparation Time: 15 Mins Cooking Time: 10 Mins Total Time: 25 Mins Ingredients For 4 servings… 1 Smoked duck breast 2 Oranges Salad leaves 1 Avocado - flesh - sliced 75 gms Walnut halves Vinaigrette - made with walnut oil Method Remove the skin from the smoked duck breast and slice the meat. Crispen the skin in a hot oven or under a grill and allow to cool. Then chop the crispy duck skin into croûtons. Meanwhile, peel, de-pith and section the oranges - reserving any juice. Arrange the salad on 4 plates with slices of duck, orange, avocado and walnuts. Drizzle over vinaigrette with any reserved orange juice and finish each salad with some crispy skin croûtons.
