This orange salad from Spain is an excellent accompaniment to cold pork, lamb, duck and with fish such as octopus, squid or prawns.

Ingredients

For     4  portions

1                    Lettuce  - Cos - cut into wide shices

˝                   Onion  - chopped

2                    Oranges  - peeled and sliced

For the vinaigrette

3 tbs               Olive oil

                      Salt

1 tbs               Sherry  - Pedro Ximénez

1 tbs               Vinegar  - Sherry

Method

Arrange the orange slices and lettuce on a platter and sprinkle with the chopped onion.  Just before serving, mix the olive oil, vinegar, Sherry and a little salt and pour over the salad.  Then gently toss together.
