This orange salad from Spain is an excellent accompaniment to cold pork, lamb, duck and with fish such as octopus, squid or prawns. Preparation Time 10 Mins Cooking Time Elapsed Time 10 Mins Ingredients For 4 portions 1 Lettuce - Cos - cut into wide shices ˝ Onion - chopped 2 Oranges - peeled and sliced For the vinaigrette 3 tbs Olive oil Salt 1 tbs Sherry - Pedro Ximénez 1 tbs Vinegar - Sherry Method Arrange the orange slices and lettuce on a platter and sprinkle with the chopped onion. Just before serving, mix the olive oil, vinegar, Sherry and a little salt and pour over the salad. Then gently toss together.
