Cold, cooked spinach makes a lovely salad.  Sprinkled with chopped hard-boiled eggs gives it a most attractive appearance with the contrast between the white and gold of the egg with the green of the spinach. 

It can be served to accompany cold meat or as a starter.

Preparation Time: 15 Mins

Cooking Time: 5 Mins

Total Time: 5 Hours

Ingredients

For 2 servings…

450 gms          Spinach     

2                    Eggs  - hard-boiled, chopped   

2 tbs               Olive oil    

½ tbs             Vinegar  - white wine 

                      Pepper      

                      Salt          

Method

Remove the tough stems from the spinach and plunge it into a large saucepan half full of boiling water.  Let the leaves will settle on the bottom of the saucepan and water come back to the boil.

Empty the saucepan into a colander and cool the spinach with cold water.  Use your hands to expel all the water from the spinach.

Leave the spinach to drain for several hours.

Meanwhile, chop the hard-boiled eggs.

Put the cold spinach into a bowl and dress it with oil, vinegar, salt and pepper.  Sprinkle the surface with chopped egg and serve.
