Many cheeses are delicious cooked.  Feta is no exception.  This simple recipe produces cheese with a pleasing texture - crisp outside and softish inside.  It is easy and quick to prepare and can be served as a starter or as a hot meze dish.

Ingredients

For 2 servings…

1                    Egg  - beaten         

200 gms          Feta cheese

8 tsp               Flour        

1                    Lemon  - cut into wedges       

3 tbs               Olive oil    

1 tsp               Oregano    

                      Pepper  - freshly ground, black 

2                    Tomatoes  - sliced    

Method

Cut the feta into two pieces.  Beat the egg in a shallow dish with the oregano and a little ground black pepper.  Sprinkle the flour on to a plate.

Dip each feta slice in the egg, shake off the excess and then dust with the flour.  Ensure each is covered with a light coating.

Heat the olive oil in a small frying pan.  Fry the cheese until golden brown on both sides, with a crust forming.   Drain on absorbent kitchen paper.

Place the cheese on two plates with slices of tomato, freshly ground black pepper and wedges of lemon.
