Halloumi, red pepper and mushroom kebabs |

These kebabs can either be cooked on a barbeque or under a grill. They can be served as a starter or as a tapas dish. Preparation Time: 10 Mins Cooking Time: 20 Mins Total Time: 50 Mins Ingredients For 4 servings… 300 gms Halloumi - cut into cubes 8 Mushrooms - button 1 Pepper - red - cut into 8 For the marinade 75 ml Olive oil 1 clove Garlic - crushed 2 tbs Coriander - chopped 1 squeeze Lime juice 1 Chilli - red, hot, dried - chopped 1 pinch Salt To serve 1 Lime - cut into wedges Method To prepare the marinade… Mix the marinade ingredients together. Then coat the halloumi pieces in the marinade mixture and leave for 20 minutes. To prepare and cook the kebabs… Assemble four kebabs, on each, alternating the halloumi with the mushroom and red pepper pieces. Save any marinade from the cheese. Cook on a barbecue or under a grill for about 10 minutes on each side or until the halloumi is starting to crispen - using the marinade to brush the kebabs while cooking. Serve with a wedge of lime.
