This is a Greek dish. Halloumi cooked with vegetable on skewers makes a less-usual form of kebab. It is delicious with the mint-flavoured yoghurt. Preparation Time: 20 Mins Cooking Time: 10 Mins Total Time: 30 Mins Ingredients For 4 servings… For the sauce 1 tbs Mint - chopped 150 gms Yoghurt - natural 600 gms Halloumi 1 Pepper - red - cut into 2 mm pieces 2 Courgettes - cut into 1 cm slices Olive oil For the ladolemono 125 ml Olive oil 25 ml Lemon juice 1 pinch Salt Method To prepare the sauce... Stir the mint into the yoghurt and chill until required. To prepare and cook the kebabs… Cut the halloumi into 3cm chunks. Thread onto skewers alternating with the pepper and courgette. Preheat a grill and brush the kebabs with a little oil. Cook them for 8 to 10 minutes, turning every2 to 3 minutes or until the cheese has softened and formed a golden-brown crust. Serve the kebabs drizzled with a little ladolemono. To prepare the ladolemono… Blend together all the ladolemono ingredients.
