This is a delicious autumn desert dish.

Ingredients

For 4 servings…

110 gms           Flour  - self-raising   

150 ml             Cider  - dry

3                    Apples  - cored, cut into wedges

                     Flour  - plain           

For deep-frying

                     Oil           

Method

Put the self-raising flour in a mixing bowl, pour in the cider and whisk to form a smooth, thickish batter.  Season, cover and leave the batter to stand for about one hour.

Heat the deep-frying oil to 170C.

Dust the apple wedges in flour and shake off any excess.

Dip 4 or 5 wedges into the batter and then lower them into the hot oil.  After about one minute, turn them over and cook them for a further minute or until they are evenly golden on both sides.  remove them from the oil and drain on kitchen towel.

Repeat with the rest of the apple wedges and serve immediately.
